I made a fall recipe that I see regularly on social media that some people might really hate

Don’t judge me, but Brussels sprouts are my secret ingredient for making the perfect fall salad.

I found the perfect way to eat a healthy salad this fall. Although it may seem disgusting to some, trust me, every bite is worth it. The main ingredient in this questionable fall recipe… are Brussels sprouts.

There is a lot of debate about Brussels sprouts, some love it and others can’t imagine anything worse. Personally, I’m a lover. Fry them with a little bacon on a Christmas dinner and you have a taste sensation. And now the latest trend seems to be to roast them and create a hearty salad.


It’s often difficult to find ways to eat healthy salads during the fall and winter months. Personally, I don’t want to eat cold lettuce when I need something to warm me up. So this Brussels sprout salad is the perfect answer in my opinion.

I had seen the recipe appears on my Instagram and TikTok several times, each time thinking “actually, that sounds pretty delicious.” It was the colors of the salad that caught my eye, the sprouts are mixed with butternut squash and that pop of orange couldn’t help but draw me in.


I had piles of carrots left in the fridge, so I decided to replace my butternut squash with carrots. I thought leeks would have been a good edition but my local TESCO was exhausted.

My first step was to boil the carrots and Brussels sprouts before roasting them in the oven – with a few pieces of bacon for added flavor – I told you we were going to be naughty. I stuck them with seasonings, honey – because nothing is ever sweet enough – and olive oil for about 40 minutes until they came out nice and crispy.


I went rogue again and decided to add a mixture of nuts, raisins and feta cheese to my roasted vegetables and bacon and drizzled a little balsamic glaze on top – and the voila. Very easy. It was a warm, cozy bowl of goodness.

Ingredients

  • 500g Brussels sprouts
  • 300g carrots
  • 1 teaspoon of honey
  • 1 cup mixed nuts
  • 100g feta cheese
  • Bacon bacon
  • balsamic glaze
  • olive oil
  • salt and pepper for seasoning


Method

  1. Preheat the oven, cut your Brussels sprouts in half and your carrots into pieces before boiling them for ten minutes.
  2. Once boiled, put them in a baking dish with the olive oil, honey and bacon bits, mix well and season. Place them in the oven to roast for about 40 minutes until lightly crisp – mix halfway
  3. Once roasted, place in a bowl to serve, adding your feta cheese, mixed nuts and balsamic glaze for flavor.
